Raspberry Cordial

This special drink I found at the end of one of my favorite books, Anne of Green Gables. It’s very refreshing with the raspberries and lemons, and I thought it perfect for starting summer.


3 1/2 cups frozen raspberries

1 cup granulated sugar

1/4 cup raw honey

4 cups boiling water

juice of two lemons


In a saucepan on medium heat, pour in the frozen raspberries and granulated sugar. Simmer for 20-25 minutes as the sugar dissolves.

Once finished cooking, mash the mixture and pour through a strainer. Throw away the seeds/pulp from the raspberries once strained.

Pour the lemon juice into the mixture and stir thoroughly.

Pour in the boiling water and stir until everything is combined.

Let cool at room temperature for 10 minutes, before placing in the refrigerator to cool completely.

Once cooled, pour the cordial into a pitcher and serve with ice. Enjoy! Makena 🙂
