Flour-less Chocolate Cake

This chocolate cake is absolutely decadent! It may seem dense, but is actually quite moist and has a very rich flavor to it. This was my mom’s special birthday cake and she loved it. Hope you will too! 🙂

Cook Time: 45 minutes

Yield: 8 slices


10 oz. dark chocolate, chopped if not chocolate chips

10 tbsp. butter, softened

1 cup sugar

7 eggs, separated

1 tsp. vanilla extract

3 tbsp. coffee grinds

1 tsp. salt


Preheat the oven to 350 degrees Fahrenheit. Grease a 9 inch round cake pan and line parchment paper inside the cake pan. Then grease the parchment paper.

Melt the chocolate and set to side to cool.

In a large mixing bowl, using a stand mixer or handheld mixer, beat the butter and sugar together until creamy and thick.

In 3 separate bowls, separate the eggs. Make sure that the egg yolks and egg whites do not mix.

Add in the egg yolks and beat on low-speed until combined. The mixture will be very runny and orange/yellow. Scrape the bowl before adding in the cooled chocolate. Beat until just incorporated. Scrape the bowl once more and add in the vanilla extract and coffee grinds. Make sure everything is evenly mixed. Transfer the batter to another bowl. Clean your used mixing bowl and whisk attachment to beat the egg whites with. Make sure no leftover batter is still attached to your equipment.

In a large mixing bowl, beat the egg whites until stiff peaks form. Spoon about 1 cup of the egg whites into the batter. Fold the egg whites into the batter with a rubber spatula. Repeat this process until all the egg whites are used. The batter will be very light and fluffy.

Pour the batter into the cake pan. Use the rubber spatula to smooth the top of the cake. Place another cake pan filled with water halfway up underneath the other cake pan to allow the cake to rise and still have a moist texture. Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean. Do not over-bake.

Transfer the cake to a wire rack and let cool completely before loosening the cake with a knife and placing on a cake stand or plate. Decorate with a dusting of powdered sugar on top. Enjoy! Makena 🙂
