Glazed Lemon Cookies

These cookies are crisp on the outside, and chewy in the middle. Atop the cookies, is a very thin layer of lemon glaze, (a little sour and sweet) and the dough itself is lemony.

Cookie Dough:

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. sea salt

1 tbsp. lemon zest

2 tbsp. lemon juice

1/2 cup butter, softened

1 cup granulated sugar

1 egg

1 tsp. vanilla extract

Lemon Glaze:

2 cups confectioners sugar

2 tbsp. lemon zest

1/3 cup lemon juice


For the Cookie Dough:

Preheat the oven to 350 degrees Fahrenheit. Line parchment paper on two baking sheets. In a medium mixing bowl, whisk the flour, baking soda, sea salt, and lemon zest together. In a separate mixing bowl, using a handheld mixer or in a stand mixer, cream together the butter and sugar. Beat in the egg, vanilla extract, and lemon juice. Slowly add in the dry ingredient mixture.

Using a cookie scoop, drop the dough onto the prepared baking sheets at least 1 inch in length apart. Bake for 20-25 minutes. Allow to cool for 2 minutes on the baking sheets, before removing and placing on a wire rack to cool completely. Use an offset spatula to spread the lemon glaze on the tops of the cookies. Once set, the glaze will have hardened.

For the Lemon Glaze:

Using a stand mixer or a handheld mixer, beat the confectioners sugar, lemon zest, and lemon juice together until combined. Enjoy! Makena 🙂
