This ice cream is definitely banana, chocolate chip, and fudge. I used my previous recipe “Basic Car-mealy Maple Fudge” in the ice cream and it gave it a more rich flavor, instead of using store bought fudge or caramel.
Yield: serves 6
Prep: 15 min. & 6 hrs & 15 min. freezing
4 ripe bananas, not brown
juice of 1/2 of a lemon
1 cup powdered sugar
2 cups heavy whipping cream
1/2 cup chocolate chips
1/4 cup & 2 tbsp. fudge or caramel
Place the peeled and chopped bananas along with the lemon juice and powdered sugar in a food processor and pulse until combined. Add in the heavy whipping cream and pulse again until mixed well.
Using your ice cream maker, freeze according to its instructions. Pour in the chocolate chips and fudge/caramel 10 minutes before ready. If you do not own an ice cream maker, pour the mixture into a bowl and cover. Freeze for 2 hours and beat with a fork to decrease the ice crystals. Put the ice cream back into the freezer for another 2 hours. Take the ice cream out from the freezer again and beat with a fork to decrease more ice crystals. Then add in your chocolate chips and fudge/caramel. Place ice cream back into the freezer for its last 2 hours.
Before serving, remove from freezer and allow to chill in the fridge for 15 minutes. Scoop with an ice cream scoop. The ice cream is supposed to be a bit creamier than regular ice creams; more like a frozen yogurt. This ice cream is also especially delicious with additional chocolate fudge added on top.
