White Cupcakes with Vanilla Glaze

These white cupcakes are moist and definitely scream vanilla. The vanilla glaze adds a nice touch to the springy cake and is perfect for special occasions.

Yield: 12-16 servings



2 cups all-purpose flour

1 1/2 cups granulated sugar

3 tsp. baking powder

1/2 tsp. sea salt

1/2 cup butter, softened

1 cup almond milk

1 tsp. vanilla extract

4 egg whites


1/3 cup butter, softened

1/4 cup cream

2 tsp. vanilla extract

1/2 tsp. sea salt

2 cups powdered sugar


For the cupcakes:
In a large mixing bowl, combine all of the dry ingredients. Add in the butter, almond milk, and vanilla extract and mix until well blended. Stop mixing and scrape bowl. Pour in the egg whites and mix until well blended once more.

Scoop batter into 2 prepared muffin pans lined with muffin tins. Bake at 350 degrees Fahrenheit for 35 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and cool for 10 minutes in the muffin pans. Transfer to a wire rack and allow to cool completely before frosting.

For the Glaze:
In a large mixing bowl, pour in the butter and mix until creamy. Stop and scrape bowl before adding in the cream, vanilla extract, sea salt, and powdered sugar. Beat until combined well. Stop and scrape bowl once more. Transfer glaze to a piping bag fitted with a 1/2 inch tip and pipe the glaze onto the cupcakes once cooled. Enjoy! Makena 🙂
